Our Flocs de Gascogne come essentially from grapes planted on Ténarèze clay-limestone soils. The red is made of Merlot (34%), Cabernet Sauvignon (33%) and Cabernet Franc (33%) while we use the old local grapes varieties Colombard (50%) and Ugni Blanc (50%) for the white.
Average vineyard age: 20 years old.
Density of planting: 4500 vines/ha.
Vineyard management: Mechanical ploughing, organic fertilization.
Harvest: End of September, by hand.
Winemaking process: Soft extraction of the fresh grapes juices, addition of Armagnac during the fermentation, minimum 1 year-ageing in oak barrels or tank, clarification with natural fining agent, cold stabilizing and soft filtration.
Bottling: Bottled on-site.
Tasting notes: Its syrupy aspect reveals complex aromas of fruits, flowers, honey and spices. It appears limpid and shiny. The palate is very suave, at once unctuous and very delicate.
Service advice: Syrupy aperitif to be poured at 10°C.
We can pour it at the heart of a melon or pair it with foie gras. It is also well matched with cheese and dessert.
