Vineyard management: Mechanical ploughing, organic fertilization.
Harvest: Mid-November. Late harvest by hand.
Winemaking process: Very soft pressing, controlled must settling, with a natural fermentation in oak barrels.
Ageing: 8 months minimum in French oak barrels.
Bottling: Bottled on-site.
Type: Very sweet wine.
Residual sugar: 75g/L.
Tasting notes: Beautiful yellow gold color, bright, with complex aromas of grapefruit, apricot and honey. The palate is full and generous followed by a freshness on the finish.
Service advice: Serve wine around 10°C - 12°C.
This wine is pleasant as an aperitif, but it can also be served with foie gras, cheese and dessert.
